Banana Bread Cupcakes w/ Chococlate Chips & Coconut on top!

Bit of a sweet spin off the orig. Had three banannas that I was about to throw out so why not?! Instead of baking the bread in a traditional pan, I choose a muffin tin because #1 convenience #2 portion control and #3 customization capabilities. I left some plain, some with just chocolate chips, then others with chocolate chips and coconut on top (like those pictured above).
